I just wanted to get it in writing that I have made dinner 4 nights in a row!!! That is a huge accomplishment for our family, or ME for that matter. I guess it has been quite nice staying home and being the best mommy and wife that anyone could imagine.
I am almost positive that Geoff's love for me has more than tripled after this week, because not only have I done dinner 4 nights, I have also done his lunch all this week, and 4 days last week, AND I made him breakfast yesterday after he got home from the gym...so egg white omelet of course!
These are the dinners I have made:
Monday night: Cashew chicken with Jasmine Rice
Tuesday night: Turkey noodle strogonaff
Wednesday night: Crockpot chicken enchiladas
Thursday night: Crockpot Italian Chicken by Kim
Friday night will be a restaurants turn- I need a little break!
I have only been using the crockpot so much because our oven is broken, as it has been for a couple of months now (just need to replace the heat element), but I LOVE the crockpot, so easy and SO good.
Thanks to my daybreak cookbook and my friend Kim Donaldson for the recipes. If you want any of them just ask, they are all VERY easy, seeing as I am not a top chef!
One other thing, I am turning the enchilada recipe into my own because Geoff said I need to, he absolutely LOVED the dinner, as did my in-laws and myself!
p.s. I am going back to my previous employment after 2 weeks of being at home. My boss got her job back, so I got mine back, woo-hoo

Congrats on getting your job back. The recipes sound great, the best sounding was the crockpot enchiladas. With garden and yard work coming up crockpot recipes sound great. Good idea!

I can verify that the Crockpot Chicken Enchiladas were wonderful. I too vote that you post the recipes. I could use some good crockpot recipes. It was wonderful and Jerry loved them too even with sour cream in them. He could not tell and that is something. Thank you

Hey, good job on the cookin'! It takes time and energy, huh? But it's worth it in the end (just ask the hubby's :). Good job on the no candy!!! I have such a sweet tooth, so I can only imagine how hard it would be. Congrats!
