Italian Chicken-Crockpot
5-6 chicken breasts
1 pkg. dry italian dressing
1/2 cup water
4 oz. cream cheese
2 cans Cream of Mushroom Soup
noodles
-put chicken in crockpot with 1/2 cup water. sprinkle 1 pkg. dry Italian dressing over chicken. Cook 1 hour on high, and 5 hours on low, then mix together cream cheese, and mushroom soup. Cook for another 45 minutes.
-Cook noodles separately, serve chicken over noodles
Cafe Rio Pork Roast
5 lb. pork roast (can do smaller)
1 can El Pato tomato sauce (yellow can, in mexican food section of store)
4 cans regular tomato sauce
1 cup brown sugar
3 cloves garlic, put through garlic press
Remove visible fat from port roast. Cook roast overnight in crockpot on low (i didnt do this, i only cooked it from 8 am until 2 pm and it was wonderful, but I did it on high for a few hours).
in morning, shred pork and season with salt and pepper. Mix tomato sauce, brown sugar and garlic. Place pork back in crockpot and pour sauce mixture over. Marinate in sauce all day, simmer 1-3 hours before serving! serve burrito style, taco style or just by itself!
Crockpot Enchiladas
4 cups, cooked diced chicken
1 cup sour cream
2 cans cream of chicken soup
1 can cream of mushroom soup
12-15 corn tortillas, torn into small pieces
1 tsp. salt
1/2 teaspoon pepper
1 small can diced green chiles
1 1/2 cups grated cheese
Combine Chicken(I buy the canned chicken from costco, so easy. I use 3-4 cans), sour cream, soups, chilies, salt and pepper in bowl. Lightly oil crockpot. Put one layer tortillas, one layer chicken mixture, repeat until gone. Cook 4-5 hours on low heat. Top with cheese last 10-15 minutes before serving!
p.s. dont leave any ingredients out, not even the sour cream lyn!!!
A few more things:
All recipes serve approx. 4 adults (at least in my household)
Slow cooker bags are amazing, when you use them you have no mess to clean up, just throw the bag away!

Thanks for the recipes, I can't wait to try the chicken enchiladas. Aren't the crockpot lines wonderful! I had to give a party where I had to have hot dishes. I used my crockpots and friends and put liners in them. The clean up was quick and painless.
My husband will thank you for the chicken enchiladas. He loves them, and I am sure he will like this recipe, I like how easy it will be, and more time for the gardens.
